People in today's times you would think would be further away from being more toxic than years before technology. This is far from the truth. Our Glutathione  Detoxificant System, Liver, Kidneys, and Gastrointestinal Tract are completely over-worked, and cannot rid the body of toxins any longer. Instead the body now has become a vessel for them to collect inside. Especially with all these Mold Toxins, Man-Made Chemicals and Air Pollution in our lives; it's no wonder we as modern humans are less healthy then our ancestors. Coffee is a great detoxing agent, however it too can contain mold toxins. So making sure you get a reputable grower and source is imperative. It can assist greatly in recovery. 

The Body's  Detoxificant System - (Also a reference to Gilbert's syndrome)
  Phase I

Detoxification involves a group of enzymes, referred to as the cytochrome P450 family. Some 50-100 enzymes make up the cytochrome P450 systems, with each enzyme working more efficiently at neutralizing certain classes of chemicals. Phase I enzymes can directly neutralize some chemicals, but most toxins are converted to an intermediate form of the toxin. The intermediate form is considered more toxic than the original and requires the action of Phase II detoxification to complete the cycle.

   Phase II

     Reactions include sulfation and glucuronidation, which are key to human detoxification, along with glutathione conjugation, methylation, amino acid conjugation, and acetylation. Phase II detoxification typically involves biochemical conjugation, in which various enzymes in the liver attach small chemical moieties to the toxin. The conjugation reaction neutralizes toxins and reactive intermediates left over from Phase I detoxification. Both Phase I and Phase II detoxification require assistance from a healthy supply of enzymes. Enzyme quantity can be influenced by dietary components. Green tea and products found in red wine grapes encourage glucuronidation and glutathione conjugation enzymes, respectively. Glucuronidation, a significant pathway in the Phase II detoxification mechanism, is the combining of glucuronic acid with toxins, a process that requires the enzyme UDP, glucuronyl transferase (UDPGT).

     Foods rich in limonene, a monoterpene found in citrus peel, dill weed oil, and caraway oil, can increase UDPGT activity and encourage the glucuronidation mechanism. Many commonly used substances--for example, aspirin, menthol, synthetic vanilla, acetaminophen, morphine, diazepam, digitalis, benzoates, and some hormones--are detoxified through the glucuronidation pathway. Beta-glucuronidase, regarded as a dangerous enzyme, interferes with the glucuronidation process, allowing toxic levels of drugs and contaminants to accumulate. Older individuals appear particularly susceptible to increased beta-glucuronidase formation because of long-term exposure to toxic agents.

     Glutathione is an amino acid (protein building block) used by the body to detoxify and remove dangerous elements such as mercury. I learned how challenging it is to keep such foods fresh when I harvested some big sunflowers and kept the seed heads in a dry place to cure.      Among many symptoms of mold toxicity are:

     chronic fatigue, food allergies, respiratory problems, brain fog skin rashes, cancer, joint and muscle pain and heart problems.  We need to support our glutathione detoxification system to deal with mycotoxins.

This is the recommended diet plan for people who are sick with this illness. It's not as hard as you might think. In the end of the whole ordeal, you will end up being much healthier with your new choices, new products, and you might even end up healthier then you were before your sickness. Enjoy the Three recipes I have listed below under the allowed and not allowed foods for this diet plan. One to Three Month of weaning off of sugar, carbs and toxins, then Six to Eight months of no sugar, toxins and carbs. Then ween yourself back onto some carbs and some sugar. In the end as stated you might not even want to go back to the old ways you were eating since you will feel much better with the new diet. I didn't go back completely and enjoy the new foods I use!

    Stringed Veggies:          
         They are a wonderful replacement for noodles if cut the right way. I have been experimenting with this and will be adding more recipes to add to the encouragement of this diet. Carrots are the best for this. The one below is for the beginning of the sugar and carb weaning, and for when you're swinging back around to small amounts of carbs. It really is a great diet recipe as well. About 20 grams of carbs in the whole meal. Tastes great on top of the health factor as well.


 There is a proper process for Mold Toxin Detox and a Candida Diet that takes a three step pattern to get back to health. This is the exact process I followed that got me back to health.

1st - 3 to 6 month slow weening off sugars, carbs and starches - Negative and Posititve sugars will have to be dropped completely.

2nd - Then Complete Detox of All Starches, All Sugars and Carbs. All fruit and veggies that could contain toxins also must be removed for this complete detox - this process should last about 6 - 8 months.

All products that could contain any form of toxin should be avoided during this time, to let the body cope with the over abundance of toxins in the bloodstream. Keep to an alkaline diet. Clean environment is also a serious necessity during the Detox Period. I recommend air cleaners that are cleaned daily with ammonia. Also clean whole house with ammonia as it kills mold and its mycotoxins. This diet plan should also be accompanied with proper herbs to flush the system of toxins.

Chlorophyll liquid caps, Alfalfa, Grape Seed Extract, Padarco, Burdock, Dandelion, Milk Thistle, Grape Fruit Seed Extract Liquid for the mouth and tongue. Neem Seed Oil will also kill candida infections in the body should also be used on external areas as well as taken internally. Other External treatments can include Tea Tree oil, Oil of Oregano (internally should only take for 3 weeks - will hurt liver and kidneys) Avacado oil (internally and external). Mold Journal:

    I had vertigo and motor function problems so bad I would fall over with my eyes close. When I would close my eyes while laying down, My eyes ran in circles as if in REM, but I was still awake. Twitching, periodic heart mummers, The shakes, all plagued me 24/7.

   I did 7 months full detox after a 3 month weening process. Now in my last four months out of it: My vision, my hearing, my balance, my coordination, my motor functions all are returning. I also can finally sleep at normal hours, and wake up normally. My exercise was heavy gardening, gradual heavy lifting, walking, and of course playing music. I am happy to state that I may not be completely free yet from the candida infection, but my immune system is now back in control. The Candida infection is almost gone.

05/24/11 - Actually, today I restart the Herbal Treatments which will include - These are mostly powdered veggie extract pills or liquid extract: Grape Seed Extract, Grape Fruit Seed Extract Liquid, Chlorophyll Liquid Extract from Alfalfa Gel Cap, Alfalfa Extract, Milk Thistle Extract, Burdock Extract, Dandelion Extract. I take one of each twice a day, and depending on how I see my Ph go down both blood and urine, is how long I will stay on them.


Ph Test strips are easy to find, and pricking your finger for a small bead of blood can show your Ph level. It can help you adjust your diet to prevent an acidic state in your body. Same goes for your urine. It should be almost neutral to a bit acidic, not a 3 like mine was when I was at my worst. my toxin level in my bloodstream during my worst was 46 parts per billion and climbed before I was able to reduce it to normal. Anything above 20 parts per billion in the bloodstream(Or any food related item as well...) is considered lethal. So as you can see, I was deathly sick. The journal will be an ongoing item here on this site to allow viewers to see the development of my condition from poor to good.


Thai Peanut/Cashew Chicken Recipe:

1/4 cup apple cider. (optional)
1/2 can of coconut milk (Can add more later for taste)
4 Tablespoons of Cashew Butter (Or Peanut Butter)
1/4 teaspoon Curry
1/4 teaspoon Paprika
1/4 teaspoon Lemon Grass Paste or Real Lemon Grass
1/2 Breast of Chicken

3 Large Carrots (Make Shoe String Fashion)

Pinch of the following to taste:

Curry Powder
Garlic Powder

1 -Pre-cook your chicken in pan with a bit of olive oil. Not much; just enough to remove most of the pink and enable you to shred it easier.

2 - Mix the above ingredients in a bowl together before adding the pre cooked chicken. I recommend to use a hand mixer. Worked good for me. Let settle in fridge in bowl covered for at least Two Hours.

2 - In pan after two hour soak: put marinade in heated pan with olive oil

Optional things to add to taste while cooking in pan:

Curry Powder
Garlic Powder

3 - Then at end of a good five to ten minutes remove lid from simmering pan. Check chicken to see if it is fully cooked. Put in some shoe string carrots, then chopped almonds or peanuts (Optional) (Shredded carrots are easy to make, and also make for great replacements for pasta.)

4 - Let simmer for few minutes under lid.

5 - Serve on shredded bed (Shoe String) of carrots and eat!

Will make two portions or one large portion (yet again this dish is for those who are starting weaning.)


Whole Grain Rosemary Oregano Pizza Crust 

(Gluten Free, Soy Free, Yeast Free, Egg Free, Vegan) Created by Carrie @ Gingerlemongirl.com

Dry Ingredients:

3/4 cup brown rice/millet flour
1/2 cup arrowroot flour
1/2 cup sorghum flour
1 teaspoon xanthan gum
1/2 teaspoons baking soda
1/2 teaspoon sukrin
1/2 teaspoon sea salt
1 teaspoons crushed rosemary
1 teaspoon garlic powder

Wet Ingredients:

2 tablespoons ground flax seeds mixed with 1/3 cup hot water
1 cup water
1/2 teaspoon apple cider vinegar
2 tablespoons olive oil

Optional Herbs:

1 teaspoon dried sweet basil
1 teaspoon dried oregano
1 teaspoon fennel seeds


     Preheat your oven to 350 degrees. Line a 12" pizza pan with parchment paper. In a medium sized bowl whisk all dry ingredients together. Add any of the optional herbs to the dry ingredients. In a smaller bowl mix together all of the wet ingredients. Stir the wet ingredients into the dry ingredients until you have a slightly sticky dough. Spread pizza dough in a large 12" circle using a spatula that's been spritzed with olive oil.

For a Traditional Pizza: Bake the crust alone for 10 minutes if you are adding traditional pizza ingredients. Remove from the oven. Add pizza sauce & toppings and bake for an additional 10-15 minutes.

For a Veggie Pizza: Bake crust for 15-20 minutes until golden brown. Remove from oven. Let cool 5 minutes and then add whatever type of sauce you want to use. Add veggies on top.


Peanut Butter Cookies
(Minuscule Carbs, NO SUGAR! Weaning Cookie)

     For these cookies, use natural peanut butter, without hydrogenated oil or added sugar. The oil in natural peanut butter usually separates and rises to the top of the jar if allowed to sit for any extended period of time. Mix this oil into the peanut butter. Do not pour it out. If you do pour it out, replace it with an equal amount of melted coconut oil. Maintaining the original fat content of the peanut butter produces the best results with this recipe. 

      Managing food intolerance's is a journey. You have to be willing to try new things and adapt your expectations and tastes and try strange ingredients that you never would have considered had it not been for an unfortunate diagnosis. Hang in there. Don't let it steal your joy in food, instead, find ways around it. These peanut butter cookies with a tall glass of cold milk could just be the perfect start to your new journey.


½ cup sifted coconut flour
1 cup organic natural peanut butter
½ cup peanuts, coarsely chopped (weaning - optional)
Blended Sukrin (1 1/4 cup) and
Stevia Baking Sugar (1/8)
4 eggs
½ teaspoon vanilla
½ teaspoon salt


    Mix together peanut butter, peanuts, sugar, eggs, vanilla and salt. Stir in peanuts and coconut flour. Batter will be runny. Drop by the spoonful 2 inches apart on greased cookie sheet. Bake at 190 Degree C (375F) for 14 to 15 minutes. Cool slightly and remove from cookie sheet. Makes about 3 dozen cookies. (bakers note: I got 15 good size cookies out of this recipe, not 3 dozen.)

     Coconut flour is very dense and you don't need a lot of it. I started with the organic peanut butter and followed with the eggs, salt, vanilla and "sugar":

(click picture on information on sukrin and places to buy it) A great substitute for sugar is a little something called Sukrin "Erythritol". It's an amazing product. Has a GI of ZERO, so it has no effect on blood sugar, so it's great for diabetics, and it is also a sugar alcohol, but has NO adverse affects on the bowels, so it's also great for people who can't normally handle sugar alcohols or Splenda and the like. It is usually derived from melons and it does tend to have a slight 'cooling' or minty taste. The recipe called for 1 1/2 cups of brown sugar, so I did half and half of Sukrin and Stevia (Stevia a bit less of since its strong). I find the Erythritol does best when blended with another sweetener. Make sure the Stevia is the baking kind.

(click picture for place to purchase flour) Finally, add the minuscules half cup of coconut flour. You will be amazed at how it thickens when you add it. I stirred everything together really well to ensure even distribution of the flour throughout the rest of the batter and then dropped it in large spoonfuls onto a baking sheet lined with parchment.  I waited the recommended 13-15 minutes and then added 2 more minutes and took them out of the oven to let them cool. Organic coconut flour. It has ZERO carbs. It also tastes great and is gluten free.
